Chicken Breast – Butter Garlic

This garlic butter chicken recipe will be perfect to enjoy during the week or as a great weekend compliment to other side-dishes. In this recipe, we will use boneless skinless chicken breasts or tenderloins without skin.

When using the whole chicken breast, it can be butter-flied into 4 equal size pieces, pounded flat into an equal thickness, sliced into thin strips, or just left whole.

What I enjoy the best about this garlic chicken recipe is that it uses basic ingredients that I already have. I don’t have to make a run to the grocery store or send my husband to the supermarket for something I forgot.

It is a very convenient weeknight meal. When buying chicken – I generally get a pack of thin-sliced boneless skinless chicken breasts. But if you buy regular chicken breasts, you can filet the chicken and cut in half to make four thin breasts.

How do you Cook Chicken Breast Without Drying it out?

Chicken has always been an easy meat to cook with because it’s so versatile and delicious. However, when chicken breast has not been properly cooked, chicken becomes dry, hard, and just unattractive.

For chicken to be tender, you must cook them at a medium temperature with a seasoned butter topping. The thinner the breast, the quicker it is going to cook.

Chicken should be cooked to 165°F for it to be safe to eat but do not overcook it!!  This recipe also serves chicken nicely with sauces such as an Alfredo sauce. Garlic butter sauce on chicken is excellent.

Tips for Making Garlic Butter Chicken Breasts

It should be done in equal thickness so the meat will cook evenly. Chicken breasts have a thick side and a thin side. You can pound the chicken breast to an even thickness or cut it into even slices. 

If I cook chicken, I’ll keep it simple. One flip on the griddle is all you need to do.  Let it sear and get a good golden-brown crust.

During the searing process the griddle will be surrounded with cooking juices and browned butter bits. That’s okay because this is where the great flavor comes from.

After cooking the chicken breast, let it rest for about 5 minutes before cutting or serving.  This helps the chicken stay moist and juicy.

Tools Used to Make this Garlic Butter Chicken Recipe

Blackstone Griddle: The Electric Griddle or Gas Flat Top Griddle will also work.

Griddle Spatula:  Use a plastic spatula for the e-series griddle or a metal griddle spatula for the gas griddle.

Herb Garlic Butter Pats:  The buttery, garlic chicken is the absolute perfect dish. We’re sure you’ll enjoy the golden, crispy chicken with a garlic sauce!

What Kind of Garlic Should I Use?

I prefer using fresh garlic that I mince using a garlic press to make this simple chicken dish, however jarred minced garlic works equally well. Generally speaking, garlic tastes better when fresh, but you should always use something that works best for you.

Can I Use Chicken Thighs Instead?

Yeah! This griddle chicken recipe is suitable for skinless, boneless thighs and breasts. I prefer boneless skinless chicken breast.

Just note the chicken thighs will cook differently at different times. Make sure to temp the chicken pieces to make sure they reach 165°F.

How to Make Garlic Butter

Homemade garlic butter is so easy to make.  You will want to make lots of extras to store in the freezer for later use. 

Check here to get my full recipe on how to make homemade herb garlic butter.  Swap out the herbs and use your favorite ones (fresh parsley, basil, mint, etc.) or what you have on hand. 

Use softened butter, your favorite seasoned salt and pepper, minced fresh garlic, and finely chopped fresh herbs of your choice.  If desired add in garlic powder, a splash of olive oil, freshly grated parmesan cheese, lemon juice, onion powder, Italian seasoning, or some chili powder for a little kick.

Stir all together and plop small dollops on to a sheet pan of parchment paper.  Place in the fridge or freezer until the butter is set.

Keep the garlic butter cold or frozen and place in an airtight container until ready to use.  Only pull the amount of butter that you are going to use for a recipe right before you need to use it.   

How to Make Garlic Butter Chicken

Gather your ingredients to make the garlic butter chicken.  Prepare your chicken breast, remove any fat or unwanted pieces and discard.  If using chicken tenderloins make sure to remove the white tendon piece that runs through the meat. 

Preheat which ever Blackstone Griddle you plan to use.  Heat the electric Blackstone Griddle to 350°F and the outdoor gas Blackstone Flat Top to medium heat. 

Lightly grease the flat top griddle with your favorite oil.  I like to use olive oil.  Season the chicken pieces with your favorite seasoned salt and pepper. 

Once the griddle is hot, place the chicken breast pieces onto the oiled surface.  If you have a thick piece of chicken breast, cover with a dome lid.

Let the chicken cook for 3 to 5 minutes before flipping.  DO NOT MOVE THE CHICKEN AROUND!!  Flip the piece of chicken over and top with a couple pieces of the herb garlic butter. 

I like to use frozen butter pieces because I always keep a bag in the freezer.  Cook until it just reaches the 165°F temperature.  Use a good digital thermometer to get an accurate reading.

No more than the 165°F!!  Remove from the flat top griddle and let the chicken rest about 5 minutes before cutting or serving. 

Add an extra layer of flavor to this butter chicken by topping it with a little bit of pesto without pine nuts.

What to Serve with Griddle Garlic Butter Chicken?

Garlic Butter Chicken – FAQ

Can I use other herbs when making Garlic Butter?

Yes, you can use other herbs when making your herb garlic butter. Dry herbs can be substituted instead of fresh herbs but use a ratio of 1 to 4 such as 1 teaspoon of dried spices instead of 4 teaspoons of diced fresh herbs. Dried spices are much more powerful, but I’d suggest starting with smaller amounts and then increasing them.

Can You Cook Chicken Breast on a Griddle?

When cooked right, chicken breasts made on a griddle taste amazing!!  Make sure the heat is not too high and top with pats of garlic butter as the chicken breast is cooking.

How Long Does It Take to Griddle a Chicken Breast?

Cooking times will vary depending on the size of the chicken breast and if you cut the breast into long slices.  Over medium heat, thin slices of chicken breast will take about 5 to 6 minutes, but a large chicken breast will take about 10 minutes to cook while using a dome lid.  Always make sure to check the temperature of your chicken before eating so that it reaches 165°F.

Ingredients

  • Chicken Breast, Skinless, Boneless 1 each
  • Herb Garlic Butter 2 tablespoons
  • Salt, Seasoned 1/2 teaspoon
  • Pepper, Seasoned 1/4 teaspoon
  • Olive Oil 1 tablespoon

Instructions

  1. Preheat the griddle to medium heat or 350°F.
  2. Season the chicken breast.
  3. Place the olive oil onto the hot griddle. Add the seasoned chicken breast to the top of the oiled hot griddle.
  4. If cooking a whole chicken breast, cover with a dome lid. Cook small chicken pieces for about 3 minutes and a whole breast for 5 minutes.
  5. Flip the chicken pieces over and top with a couple pats of garlic herb butter.
  6. Cook the chicken pieces until the internal temperature has reached 165°F.
  7. Remove from the griddle and let rest for about 5 minutes. Serve whole or slice into pieces.
